Most coffee from Cauca is grown on the Macizo Colombiano (the Colombian Plateau) surrounding the colonial town of Popayan. Traditional varieties such as Castillo, Colombia and Caturra are popular in Cauca, and thanks to high growing altitudes (around 2000 masl) these coffee tend to be big, bright and juicy.
Farmers in this region average about six acres of land. They pick, pulp, ferment and dry their coffee on raised beds with parabolic covers, especially important due to Cauca's humid climate.
